Pink Coconut Nanaimo Bars

Serving Size: Prep Time: 20 -25 minutes Cook Time: 0 minutes


Bottom Layer:
1/2 cup (ish) ButterMargarine One or the other
1/4 cup Icing Sugar
5 tbs Cocoa Powder
1 Egg(s) Beaten
1 1/4 cups Graham Crumbs
1/2 cup Almonds Finely chopped
1 cup Coconut Shredded
Middle Layer:
1/2 cup (ish) ButterMargarine One or the other
2 tbs and 2 tsp Heavy Cream
2 tbs Custard Powder Vanilla
2 cups Icing Sugar
Top Layer:
1 cup Chocolate Chips
2 tbs Butter


Bottom layer:

  1. Melt the butter and then add the icing sugar, cocoa powder and egg. (Can be done in the microwave).
  2. Stir in graham crumbs, almonds and coconut.
  3. Press firmly into a 8x8" or a 9x9" pan. Be sure to line with aluminum foil first.

Middle layer:

  1. Cream butter, cream, custard powder and icing sugar together until light and well mixed.
  2. Add food colouring if so desired.
  3. Spread over bottom layer.

Top layer:

  1. Melt chocolate chips and butter together. (Again, can be done in the microwave).
  2. Pour over second layer and distribute evenly.
  3. Place in the fridge to chill.

Eat and your tummy will sing it's praises!

Note: To serve, slice with a warm knife or one that is serrated so that the layers don't separate.
