Chocolate Pumpkin Pie
|1/2 lb||Tofu Firm|
|1 can (approx. 540 ml)||Pumpkin Puree|
|1/2 cup||White Sugar|
|1/4 cup||Maple Syrup|
|1 tsp||Vanilla Extract|
|1/2 cup||Cocoa Powder|
|1/2 tsp||Nutmeg Ground|
|1/2 tsp||Cinnamon Ground|
|1/2 tsp||Cloves Ground|
|Graham Crumb Crust|
|1 3/4 cups||Graham Crumbs|
|1/3 cup||Margarine Low fat (or vegan)|
|2 tbs||Maple Syrup|
- Mix ingredients for crust. Press into a lightly greased pie plate.
- Pre-heat oven to 400 degrees.
- Process all ingredients in a blender or food processor until smooth and creamy, adding more soy milk if needed.
- Bake for 30 to 35 minutes, or until set. Serve with a dollop of whipped cream if desired.
Eat a big piece and enjoy how yummy it is even though it's healthy! :)
