Almond Granola with Dried Fruit

Serving Size: 8 cups Prep Time: 25 minutes Cook Time: 40-45 minutes


1/4 cup Honey
1/4 cup Maple Syrup
1/2 cup Brown Sugar
4 tsp Vanilla Extract
1/2 tsp Salt
1/2 cup Vegetable Oil
1/4 tsp Cinnamon
5 cups Oats Rolled or large
2 cups Almonds Chopped
2 cups Dried Fruit Chopped


  1. Adjust oven rack to upper-middle position and preheat oven to 375˚F.
  2. Line baking sheet with parchment paper
  3. Whisk honey, brown sugar, vanilla, and salt in large bowl. Whisk in oil. 
  4. Fold in oats and almonds until thoroughly coated.
  5. Transfer oat mixture to prepared baking sheet and spread across sheet into thin, even layer.
  6. Compress mixture until very compact and hard.
  7. Bake until lightly browned, rotating sheet once halfway through baking.
  8. Remove from oven and cool on wire rack for about 1 hour.
  9. Break cooled granola into pieces and then stir in the dried fruit.
